2 lbs diced pork
1 1/2 lbs green chilies(Anaheim peppers)
8 pieces canned green chilies
4 large jalapeņos peppers
3 extra large garlic cloves
3/4 to 1 cup flour
1 to 2 TBL olive oil
onion salt

Directions:
Directions:
Roast and peel and remove seeds from chilies and dice. Quarter and remove seeds from jalapeņos and finely chop. Peal and finely chop garlic cloves.

Brown salted and seasoned pork in olive oil.
Remove pork from pan and saute chopped garlic in the rendered oil.

Put 3/4 cup of flour in large jar with hot tap water and shake well. Pour flour mixture into pan with garlic and seasonings and add water. Boil briefly constantly whisking.

Pour sauce into crock pot delumping through sifter and empty garlic from sifter into crockpot/pan and add chopped jalapeņos, chilies, and pork. Top off 4 qt crock pot near to the top (about 3/4 inch from top) with water.
Cook in crock pot/pan simmering for approximately four to five hours. This recipe is for fairly hot chili reduce jalapeņos if necessary. Add 1/2 cup corn starch while simmering for thicker sauce
