1 bag 10 minute rice
1 10oz. can of diced tomatoes and green chiles
1 lb. ground beef, browned
4 cups tortilla chips, crushed
1 15 oz. can seasoned pinto or chili beans
1 lb. cheese, your choice, cut into cubes
1/4 c. green onions, sliced
non-stick cooking spray
Sour cream, optional

Directions:
Directions:
Prepare rice according to package directions, set aside. Preheat oven to 350. Spray a 13x9x2-inch baking dish with non-stick cooking spray. In a medium bowl, combine cooked, diced tomatoes and green chilies and ground beef. Set aside. Cover baking dish bottom with tortilla chips. Layer half of the cheese over the tortilla chips. Top with beans and rice mixture. Top with remaining cheese. Bake uncovered for 15 minutes or until cheese is melted. Garnish with green onions and sour cream if desired.
