3 cups Flour
1 cup granulated sugar
4 tsp baking powder
1/2 tsp salt
4 tbsp chilled butter, cut into thick slices
1 1/2 cups blueberries, fresh or frozen (do not thaw)
Grated rind from 1 lemon
1 cup milk
2 eggs beaten

Directions:

Heat oven to 350º. Lightly coat a 5x9 loaf pan with cooking spray. Combine the dry ingredients in large bowl. Using a pastry blender (or your fingers) work the butter into the dry ingredients until it looks like coarse crumbs.Mix is blueberries and lemon rind. Stir in milk and eggs until well blended. Pour into pan. Bake 55 mins or until toothpick comes out clean. Turn onto a wire rack.
