12 oz bag of pasta (penne or gemelli)
1/4 cup Olive Oil
2 red bell peppers. thinly sliced
2 gloves garlic, chopped
2 bunches arugula (thick stems removed)
12 oz bocconcini (small balls of fresh mozzarella), cut in half or fresh mozzarella cut into bite size pieces
Salt and Pepper to taste

Cook pasta, reserve 1/2 cup of the cooking water, drain pasta and set aside with reserved water.
Using same pasta pot, heat olive oil, add garlic and bell peppers, stirring occasionally, until peppers are tender (about 5-7 mins.) Add the arugula, mozzarella and cooked pasta with the reserved water. Season with 1 1/2 tsp salt and 1/4 tsp pepper. Cook, stirring until arugula is just wilted, about 1 min.
