1/4 cup oil
6-8 eggs
1 TBLS water
4-6 potatoes, peeled and diced (can leave peeling on if desired)
1 onion, diced (Optional)
1 can of SPAM, diced
Salt and Pepper to taste
1/2 to 1 cup shredded cheese

Directions:
Directions:
1. Preheat oven to 350 degrees
2. Prepare potato and onions for cooking
3. Heat oil in skillet
4. Add potato, onions and SPAM to hot oil
5. Cook until tender
6. MIx eggs and water in small bowl and then add to potato mixture
7. Cook until eggs are done
8. Pour mixture into casserole dish
9. Cover with cheese
10. Bake in 350 degree oven for 15-20 minutes or until cheese is melted
11. Serve with fruit and or toast

1. Left overs are delicious as breakfast burritos, just add warm mixture to warm tortilla, add additional cheese and sour cream
