1 rump or standing rib roast
salt
pepper
garlic powder

Directions:

Rub the roast with salt, pepper, and garlic powder; let stand at room temperature. Place, fat side up, in roasting pan. Early in the day, place in cold oven. Roast for 1 hour at 375º. Turn off the oven until 1/2 hour before serving. Turn oven on the 375º for the remaining 30 minutes. Important: DO NOT open oven door from time you put roast in the oven until you are ready to eat. The roast will be a beautiful brown on the outside and rare on the inside, regardless of size. If a less rare roast is desired, the temperature should remain the same, but the final reheating time may be increased by 10 minutes.
