2 T Extra Virgin Olive Oil
1 Large Onion, chopped
2 Cloves Garlic, minced
2 T Chili Powder
2 t Oregano
1 t ground cumin
1/2 t crushed red pepper flakes
1 lb lean ground beef or ground turkey
1 can (15 oz) tomato sauce
1 C water
1 C cooked kidney beans
1 C cooked black beans
Kosher Salt to taste
1/2 C Chopped Cilantro
Hot Pepper Sauce to taste

Directions:

In a large soup pot or dutch oven, heat oil over medium heat. Add onions, garlic and cook until translucent (5min) stirring frequently.

Stir in chili powder, oregano, cumin and crushed red pepper, and cook for 1 minute stirring constantly. Add ground meat and stir to brown (about 3 minutes).

Add tomato sauce, water and beans. Season with salt to taste. Bring to a boil. Reduce to a simmer, cover and cook for 30 minutes, stirring often until flavors have melded and sauce has thickened. Stir in cilantro and hot pepper sauce if desired.
