1 C WASHED LENTILS
4 C WATER
4 T SALAD OIL (I USE OLIVE OIL)
1 t SALT
¼ C FINELY CHOPPED ONION

Directions:
SAUTE ONIONS IN A SAUCE PAN WITH OIL. WHEN TENDER, ADD WATER, LENTILS, AND SALT. WHEN THE LENTILS COME TO A BOIL, REDUCE HEAT TO SIMMER AND COOK (COVERED) FOR AN HOUR OR UNTIL LENTILS ARE TENDER. ADD WATER AS NEEDED TO KEEP LENTILS SOUPY. PREPARE 1 ½ C MINUTE RICE ACCORDING TO DIRECTIONS ON PACKAGE. THIS CAN BE DONE AHEAD OF TIME. WHEN LENTILS ARE DONE, COMBINE WITH RICE AND SERVE WITH GRATED CHEESE.
