2 beef top round or flank steaks (1-1 1/2 lb. each, cut 1/2" thick)
1 T. olive oil
1 medium onion, chopped
1/2 c. chopped red bell pepper
1/2 c. chopped green bell pepper
2 T. fresh cilantro, minced
2 T. lime juice
1 jalapeņo pepper, seeded and minced (optional)
1 can (20 oz.) chopped green chillies
1 c. salsa or picante sauce, divided

Rub both sides of meat with olive oil. Combine remaining ingredients except salsa in a mixing bowl and blend well. Measure out 1/2 of the veggie mixture, cover and refrigerate for later. Spoon remaining veggie mixture over each steak. Roll steak, beginning at the narrow end, jelly-roll fashion. Tie with kitchen string and place in stoneware. (Instead of tieing, I arrange the steak rolls close together in the crock pot so that they do not come unrolled.) Spoon 1/4 c. salsa over the rolls. Cover and cook on low for 8-10 hours or high for 4-5 hours. Spoon remaining 1/4 c. salsa over rolls during the last 15 minutes of cooking. Slice steak into serving portions and accompany with salsa mixture. (The steak probably will not need to be sliced , rather it will fall apart so that you can spoon a portion out.) May also be served on a warmed tortilla as you would a fajita.
