3 lightly beaten Eggs
2 cups Picante Sauce (additional for serving)
16 oz. can rinsed and drained Kidney Beans
11 oz. can drained Mexicorn
1 chopped medium Onion
2-2 1/4 cans drained Sliced Olives (optional)
3/4 dry Bread Crumbs
1 envelope Taco Seasoning
1 tsp. Ground Cumin
1 tsp. Chili Powder
1 lbs. Ground Beef
8 oz. shredded Cheddar Cheese

Preheat over to 350 and use 2 ungreased 9x5x3 meat loaf pans.

In large bowl, combine the eggs, 1/2 cup picante sauce, beans, corn, onion, olives, bead crumbs, taco seasoning, cumin and chili powder.

Crumble beef over mixture and mix well.

Pat into loaf pans and bake uncovered for 50-55 minutes or until meat therometer reads 160 .

Spoon remaining picante sauce over each loaf and sprinkle with cheese. Bake 10-15 minutes longer or until cheese is melted. Let stand 10 minutes before slicing. Serve with additional picante if desired.
