6 eggs
3/4 tsp. salt
1/2 tsp. pepper
1 10 oz. package frozen chopped spinach, thawed and squeezed dry
1 16 oz. container cottage cheese
1 bunch green onions, chopped
1 c. packed grated sharp cheddar cheese
1/4 c. all-purpose flour
3 T. chopped fresh dill or 1 T. dillweed

Preheat oven to 350. Butter a rectangular glass dish. Beat eggs, salt and pepper in a bowl, then mix in spinach. Add remaining ingredients and stir until well blended. Transfer mixture to prepared dish and bake until casserole center is firm and top is golden, about 45 minutes.

I like to add additional vegetables, like sliced mushrooms (saute first to get rid of liquid and pat dry) and sundried tomatoes. Can also add feta or goat cheese in addition to other cheeses.
