Graham Cracker Crust:
40 graham cracker squares (20 double squares)
½ c. granulated sugar
½ c. melted butter

Filling:
4 (8oz) squares of soften cream cheese
4 large eggs
½ c. granulated sugar
½ tsp. vanilla extract

Directions:
Directions:
Crush graham cracker crumbs. Mix with sugar and melted butter with a fork or pastry blender until thoroughly mixed. Set ½ cup of the mixture aside.

Press remaining crumb mixture into the bottom and sides of a 9x13 pan, prepared with cooking spray. Bake at 350 for 10 minutes to set. Let cool.

With an electric mixer, blend 1 cream cheese square and 1 egg. Add another square of cream cheese and another egg as the mixture becomes blended until all 4 of each are blended.

Add sugar and vanilla to the cream cheese mixture and blend until smooth. Pour into graham cracker crust. Sprinkle with remaining graham cracker crumbs. Bake at 350º for 20 minutes. Let cool then refrigerate, covered. Best if made at least 3 or 4 hours before servicing.

My Mom was known for this cheesecake at family gatherings and everyone expected it. She told me that she got the recipe from a morning talk show on TV when she was a young mother, giving a bottle to one of my older sisters. She thought it sounded good and said it was lucky the recipe was so simple as she had to memorize it until my sister finished her bottle and Mom could write it down.

My mom passed away 15 years ago but the tradition lives on. At every family gathering you can count on cheesecake being served. More than just a delicious dessert, we all feel it's one way our mother lives on in our family. I've even entered it in a baking contest here at work and won first place!
