30 to 40 fresh mussels
1/2 cups unsalted butter
1 med. minced onion
Lots of garlic ( 4 cloves halved, but you can use less)
Fresh Rosemary about a TBsp chopped
Snipped chives about a TBsp
Flat leaf parsley about a TBsp
Lemon juice to taste
1 med. tomatoe (chopped)
1 cup Madeira wine

Directions:
Directions:
Melt butter in large frying pan, add onions and garlic and herbs. Put mussels in after butter is all melted. Add wine and tomatoes. Bring to a boil - take off burner after mussels open. add lemon juice to taste

Serve in large soup dishes with broth and a crusty bread.
