TWO SHEETS OF PUFF PASTRY
1 TIN OF ANCHOVIES IN OIL
UNCOOKED RICE [ABOUT 1 CUP]
I LARGE TIN OF TUNA [DRAINED]
BLACK OLIVES
DICED PUMPKIN [1 1/2 TO 2 CUPS]
OLIVE OIL [ABOUT 1 CUP]

IN A BOWL MIX PUMPKIN, RICE, OLIVES, ANCHOVIES AND TUNA.

IN A PIE DISH PLACE ONE SHEET OF PUFF PASTRY, AND PRICK BOTTOM WITH A FORK.

PLACE THE MIX INTO THE PASTRY AND COVER WITH THE OTHER SHEET OF PASTRY. PUT ABOUT 4 HOLES IN THE TOP AND POUR THE OIL INTO THE HOLES.

BAKE IN MEDIUM TO HOT OVEN UNTIL THE PUMPKIN FEELS SOFT AND THE PASTRY IS NICE AND GOLDEN.

ALL AMOUNTS ARE APPROXIMATE. I PROBABLY DIFFER AMOUNTS EVERY YEAR AND IT ALWAYS TASTS YUM!

MY FAVOURITE MALTESE RECIPE IS THE PUMPKIN PIE THAT WE ALWAYS HAVE SPECIAL FOR GOOD FRIDAY. OUR FAMILY TRADITION WAS HOT CROSS BUNS FOR BREAKFAST, THEN MUMS SPECIAL PUMPKIN PIE FOR LUNCH AND FISH OR SOME OTHER SEAFOOD FOR DINNER. WHEN JULIA WAS IN MALTA LAST EASTER SHE EXPECTED THIS TO BE ON THE MENU. BUT IT WASN'T. DADS FAMILY DIDN'T KNOW ABOUT IT SO I EXPECT IT IS A MIFSUD FAMILY RECIPE. ANYWAY I STILL BAKE MY PIE FOR JIM AND I EVERY YEAR. HE LOVES IT.
