"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

4 cups fresh or frozen cranberries 1 cup sugar 1 cup water 1/2 cup brown sugar 2 tsp cinnamon 1 1/2 tsp ground ginger 1/2 tsp ground cloves 1/3 tsp ground allspice 1 cup chopped tart apple 1/2 cup golden raisins 1/2 cup diced celery
In a large sauce pan, combine the first 8 ingredients. Bring to a boil, reduce heat, and simmer uncovered for 20 minutes, stirring occasionally. Add the apples, raisins, and celery. Simmer, uncovered until thickened, about 15 minutes. Cool. Refrigerate until serving.
Great when served over cream cheese with sweet crackers!
