1/2 lb whole button or cremini mushrooms 1 1/2 cups baby carrots 1 medium onion, peeled, cut into 1/2 inch. think wedges 1 large yellow, red, or green bell pepper, cut into 8 inch strips 1/3 cup zesty Italian Reduced Fat Dressing 1/3 cup Parmesan cheese, divided
Preheat oven to 450º. Line 15x10x1 inch baking pan with foil - spray with cooking spray.
Toss vegetables with dressing and 1/4 cup of cheese - spread into prepared pan.
Bake 28-30 minutes or until vegetables are tender stirring after 15 minutes. Sprinkle with remaining cheese and serve.
