1 c. chopped onion
2 cans (4.5 oz) shrimp
1 jar (4.5 oz) sliced mushrooms
2 Tbsp butter or margarine
1/2 lb fresh cooked or canned crab meat
1/2 tsp salt and pepper
1/4 tsp paprika
8 sole, or 2.5 lb flounder
2 cans mushroom soup, no water added
1/3 c. chicken broth
2 Tbsp water
2/3 c. shredded cheddar cheese
2 Tbsp minced parsley

Combine and saute chopped onion, shrimp (rinsed and drained), mushrooms (drained), and butter. Add and heat through crab meat. Add salt, pepper and paprika. Spoon mixture on sole or flounder. Roll and fasten with toothpick. Place in a greased 13x9 baking dish. Combine mushroom soup, chicken broth and water. Pour over fish fillets. Sprinkle with 2/3 c. shredded cheddar cheese. Cover and bake at 400 for 30 minutes. Sprinkle with 2 Tbsp minced parsley. Bake 5 more minutes, uncovered. Serve over rice if desired.
