1 1/2 c salad oil 2 c. sugar 4 eggs 2 tsp baking powder 1/2 tsp salt 1 c. chopped pecans or walnuts 1 tsp vanilla 2 tsp soda 2 tsp cinnamon 3 c. flour 3 c. grated carrots
Blend oil and sugar. Add eggs one at a time. Beat after each one. Sift dry ingredients and add. Stir in nuts, carrots and vanilla. Bake at 350º for 30-40 minutes in 3 round pans or 1 sheet cake (35-40 minutes). Top with cream cheese icing!
