8 potatoes, cooked, cooled, and sliced
1/2 of a medium onion, chopped
6 slices of bacon, cooked
3 tbsp fat (from cooked bacon)
1/2 jar pimentos
1 stalk celery, finely chopped
2 tbsp flour
2/3 cup vinegar
1 1/3 cups vinegar
1/4 cup sugar
salt
pepper

Directions:
Directions:
In a large bowl, combine potatoes, onion, and bacon. In a pot, or in the skillet the bacon was fried in, mix the 3 tbsp of bacon fat that was reserved, flour, vinegar, and water. Cook to thicken slightly, add sugar, salt and pepper and simmer for 10 minutes. Adjust the sauce to taste, you want a little bit of tang. Pour sauce over potato mixture, stir and serve warm
