10 oz. pkg. frozen chopped spinach 1 T. minced green onion 3 eggs, beaten 1/2 c. sour cream 1 c. grated Parmesan cheese 1 T. flour 2 T. margarine 1/8 tsp. nutmeg 1/4 tsp. salt dash of pepper
Cook spinach according to package directions adding onion to pan as spinach cooks. Drain well. Fold in eggs and sour cream. Mix in Parmesan and flour. Stir in butter, nutmeg, salt and pepper. Turn into a 1-quart casserole and bake at 350 F for 25-30 minutes or until the center is set.
