4 artichokes
4Tablespoons parsley
1cup breadcrumbs (dried white bread)
3 finely chopped garlic cloves
4 olives chopped
4 anchovy fillets chopped
4 tablespoons of olive oil
salt and pepper
vinegar

Directions:
Directions:
Soak the artichokes in salted water for 25 minutes or longer. Drain and beat each artichoke facing top of vegetable downwards,on a table top so as to open the leaves. I also cut the top of leaves with a scissors and rub tops with lemon juice to prevent browning. Prepare filling by mixing all ingredients together. Fill artichokes by pulling leaves away from the main stem and stuffing with the mixture.Place artichokes standing side by side in large pan . Pour a little oil and vinegar on each artichoke. Add a little water (just enough to come to top of base of artichoke).Cover with tight fitting lid and simmer gently for 11/2 hours or until leaves can be easily pulled out. Enjoy !
