1 pound sharp or extra sharp cheese, grated
1¾ cups plain flour
¼ pound (1 stick) butter, creamed
½ teaspoon salt
¼ teaspoon red pepper
Dash of hot sauce, if desired

Directions:

Cream butter, add cheese, salt, red pepper and hot sauce (if desired). Then add flour. Put in cookie press or roll thin and cut in narrow strips about 4 inches long. Bake at 350º for twenty-five minutes or until light brown. Makes about 100.

Don't chill the dough if you use the cookie press. It will be so thick you'll never be able to push it out!! Cheese straws may be sort of passé now, but I still think no reception, tea or cocktail party is complete without them.
