1 c. soft butter
1 c. sugar
1 egg
1 tsp. vanilla
1 16oz can pumpkin
2 c. flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
1 cup chocolate chips
1/3 c. chopped nuts (optional)

Directions:
Directions:
Cream butter, gradually adding sugar and beat until light and fluffy. Beat in egg and vanilla. Blend in pumpkin. Sift dry ingredients. Add to creamed mixture. Stir in chips and nuts. Drop by teaspoon onto ungreased cookie sheets. Bake at 375 degrees for 10 -12 minutes.

Kids love these without the nuts so after putting half on the baking sheet, I fold in 1/4 c. finely chopped walnuts for the rest.
