Ingredients: 12 eggs 5 C flour 4 C milk 4 t Sugar 1/8 salt x 4 4 C Carbonated Water Filling: 1 lb. mozzerlla 3 lb. Riccotta 3 eggs 3/4 C Parmigano Cheese parsley salt pepper

Directions:Preheat oven 350 Mix all ingredients together and hand beat. In a teflon pan, pour enough mixture to cover pan and spread around til it reaches the edges. Turn. Continue to do this til you have enough crepes you desire to serve. You can stack each one on top of the other. Once they are cool you can start to fill. Filling: All all the filling ingredients together. Mix Spread small amount of filling in one crepe. Bring One edge on top of the other. Then fold opposite edges to make a square. Put in baking dish, line dish with sauce. Cover each square with sauce and mozzerella and grated parmiganno cheese. Mange |
