1 c. finely chopped walnuts
2/3 c. fresh bread crumbs
2 T. butter, melted
2 T. chopped parsley
4 6 oz. salmon filets, skinned
4 tsp. mayo

SAUCE:
1 c. plain non-fat yogurt
1 small garlic clove, minced
½ cucumber, grated

Directions:
Directions:
Preheat oven to 450. Combine walnuts, bread crumbs, butter, parsley, salt and pepper to taste. Season the salmon with salt and pepper and set, skinned side down, on an oiled baking sheet. Spread a teaspoon of mayo on top of each filet and top with walnut mixture, pressing it into fish. Bake until just done, 10-12 minutes.

While fish bakes, combine sauce ingredients. Salt and pepper to taste. Serve with fish.
