Cooked chicken
Chicken broth (1 box)
1 can dice tomatoes
1 ½ cans of corn
Onion
2 tbs. Cumin
1 jalapeño pepper, seeded and chopped
Garlic
EVOO
Tortilla strips
Avocado
Cilantro
Cheese

Directions:
Directions:
Shred cooked chicken

Pre-heat a skillet over medium-high heat with about 2 tablespoons EVOO, about two turns around the pan. Add the onion, garlic and cumin, and cook until soft, about 3-4 minutes.

Add the corn, diced tomatoes, and jalapeño. Add the stock and chicken.

Simmer for 10-15 minutes. Add in the cilantro, tortilla strips, cheese, and avocado.
