Salad:
4 cups diced cooked Potatoes
1/2 cup chopped Celery
1/2 cup sliced Green Onions
1/2 cup diced Red Bell Pepper
1 1/2 cup (6 oz.) cubed Monterey Jack Cheese

Dressing:
1 cup Mayo
2 T. prepared Pesto
1 T. Parmesan Cheese

Directions:
Directions:
Salad:
Combine all ingredients.

Dressing:
Mix mayo and pesto.

Add dressing to salad and sprinkle with Parmesan cheese and chill.
