1 cup bread crumbs
3 ripe tomatoes, peeled
1 onion, thinly sliced
2 cups grated cheddar cheese
3 eggs
4 slices bacon, partially cooked

Directions:
Directions:
In a deep dish pan, buttered well layer twice, crumbs, tomatoes, onions and cheese. Beat eggs, place on top with bacon. Bake at 350 degrees F for 35-45 minutes.

I look forward to trying this recipe once our tomatoes start to ripen in the garden. Mom told me about this recipe years ago and even mailed me a copy of it so I could try it. My sister, Lisa who doesn't like tomatoes, liked this recipe when she tried it!
