1 avocado
1 Tbsp fresh lime juice
1 Tbsp chopped fresh cilantro
1 Tbsp diced red onions
1 English or seedless cucumber

Directions:
Directions:
Dice the avocado and onion very finely. In a medium bowl, combine the avocado, lime juice, cilantro and red onions. Season with salt and pepper to taste.

Slice the cucumber diagonally. You can substitute a regular cucumber if an English cucumber is not available.

Divide avocado-onion mixture among cucumber slices.

Our absolute favorite summer appetizer! Todd and I discovered this one when I was trying out recipes for Jamie's bridal shower, and we made it over and over that summer. Perfect to nibble on while sitting out on the deck with a cold beer after a long day.
