1 lb polenta (finely ground corn meal)
1/2 lb ground or thinly sliced cheese (mozzarella, blue cheese or your favorite kind)
Spaghetti sauce or tomato sauce (see broccoli bake)

Directions:
Directions:
Boil polenta, stirring constantly until mixture thickens. In a buttered baking dish alternate layers of thickened polenta with layers of cheese, ending with a layer of polenta. Sprinkle with ground cheese. Bake in a medium oven until polenta mass is "solid", cut into squares and serve with spaghetti sauce or with tomato sauce.

Leftover polenta squares can be toasted in butter in a frying pan like French toast and eaten with any meat or vegetable sauce.
