One medium length zucchini per person 1/4 lb blue cheese per person 4-5 Tbsp butter
Thinly slice zucchini lengthwise from bottom to top, leaving the top 1-2" solid (so the zucchini somewhat resembles the leaves of a fan, the top being the fan's handle). Between the leaves of the fan, insert thin slices of blue cheese.
Place the zucchini fans into a lightly buttered baking dish and bake at moderate heat until done.
