For the rice:
2 c of rice
4 c of water
2 tbsp of tomato sauce
2 bay leaves
2 tbsp of olive oil
1/2 tbsp of salt (or knorr cubic)

For the Tuna:
2 can of 7oz. of tuna in oil
2 tbsp of olive oil
1 onion chopped
5 garlic cloves chopped
1 red pepper chopped
2 tomatoes chopped
2 bay leave
1 can of 7oz. tomato sauce
Salt & pepper
Cayenne pepper (optional)

Directions:
Cooking the Rice:
Bring the water with olive oil, salt and leaves and the tomato sauce to boil and then add the rice. Reduce the heat to Med-Low till it is almost done (enough time to make the tuna sauce)

Cooking the Tuna Sauce:
Cook the onions, garlic with the olive oil for 10 minutes then add peppers, tomatoes, tomato sauce, bay leave, tuna and cook for another 10 minutes on a Med-Low heat, season with salt and pepper.

Add the Tuna Sauce on top of the rice let it simmer for about 5 minutes then mix the rice with the sauce, be careful not to smash the rice.

Serve with salad.
