1 lbs elbow Mac
1 lbs shredded Sharp Cheddar Cheese
5 thick slices of American Cheese
3 oz butter
3 tbs flour
1 clove garlic
1 small shallot
2 ˝ cups whole milk
˝ cup heavy cream

Directions:
Directions:
Preheat oven to 350 degrees

Cook Macaroni and drain without over cooking (run under cold water to stop the cooking and rinse off the starch)

In large pot or pan, melt butter and a little olive oil
Sauté finely chopped garlic and shallot

Add flour to make a roux

Cook roux until it starts to get slightly brown
Add milk and cream slowly stirring constantly to prevent lumps

After all liquid is added, bring to simmer and let white sauce cook for about 5 to 10 minutes to thicken slightly

Reduce heat to low and add American cheese 1 slice at a time and then 2/3 of the Cheddar Cheese

Mix in macaroni and pour into 9 x 13 pan
Sprinkle remaining cheese on top, cover and cook for approximately 1 hour
