• 2 Cups medium grain rice
• 1 cup pineapple/coco lopez mixture
• 1 large clove of garlic
• 3 cups water
• 1 cup chopped walnuts

Directions:
Directions:
Over high heat, sauté finely chopped garlic in a generous amount of olive oil
When garlic just begins to turn light brown (be careful not to burn it) add rice and stir to coat rice with oil and garlic.
Cook rice in oil for about 30 seconds
Add coco lopez/pineapple and water, stir and cover
Bring to boil, stir again, cover and reduce to low
Cook like normal rice, but just before finished add in walnuts, stir, cover and finish cooking
