1 lb. fresh ahi tuna (sushi grade preferred), cut into small cubes (with any dark meat removed)
½ tsp. Tabasco sauce, or more to taste
Salt to taste
2 T. extra virgin olive oil
Minced chives for garnish.

Directions:
Directions:
Combine the tuna, Tabasco, salt and olive oil; taste and adjust seasoning (don’t go easy on Tabasco). Serve immediately or refrigerate up to 2 hours. Garnish with chives just before serving. Serve with crackers or toasted bread.
