2 1/2 cups all purpose flour (measured after sifting)
2 tsp baking powder
1 tsp baking soda
1/2 tsp kosher salt
1/4 cup lard, cold
2 TBLS butter, cold
1/2 pint buttermilk

Directions:
Directions:
1. Preheat oven to 500 degrees.
2. Mix flour, salt, baking powder and baking soda in bowl to blend thoroughly.
3. Add the cold lard and butter. Using light fingers, coat it in flour and rub between your fingers until half lard and butter is finely blended and the other half is in larger pieces.
4. Pour in buttermilk and stir quickly until the dough is blended into a ball. Turn dough ball out onto a floured surface, and with floured hand flatten dough to 1/2 inch thickness. Fold flatten dough in half onto itself and flatten dough again. Repeat flattening once more.
5. Then using your floured hands flatten dough to a thickness of 3/4 to 1 inch.
6. Using a biscuit cutter, cut out biscuits without twisting the cutter in the dough. Arrange biscuits on prepared baking sheet so they barely kiss.
7. Bake 15-20 minutes, checking after 10 minutes. When biscuits are golden brown, brush with melted butter, return to oven and brown for 3 to 4 minutes more.

The secrets to these biscuits are: Work the dough with hands as little as possible; cut them a little thicker than usual; and, let them brown beyond the golden stage.
