225g / 8oz Red Lentils
1.5 Litres / 2.5 Pints Vegetable stock
2 Carrots, sliced
1 Onion Chopped
2 potatoes, diced
450g / 1lb Chopped Vegetables of your choice for example , Turnip, Parsnip, Curette, Cauliflower Florets, Leek Swede
Salt and freshly Ground Black Pepper

Directions:
Directions:
Place the washed and drained lentils in a large saucepan with vegetable stock and boil for 10 Minutes.
Add the vegetables, bring back to boil and simmer for a further 15-20 minutes until the Vegetables and Lentils are soft. Season with Salt and Freshly Ground Black Pepper.
Liquidise using a hand held electric blender or in a food processor. serve hot with warm crusty bread
