Won Tons

1 c. part-skim ricotta cheese
1/4 c. blanched almonds, toasted
1/2 t. all-purpose flour
1/2 c. chopped fresh mint
2 T. grated fresh parmesan cheese
2 T. fresh flat-leaf parsley leaves
2 T. finely chopped fresh chives
1 T. grated lemon rind
1/2 t. fine sea salt
1/4 t. fresh ground black pepper
1 large egg white
1 garlic clove, chopped
30 won ton wrappers
cooking spray
1 larg egg whte, lightly beaten


1 (28 oz) can whole tomatos, drained
1 t. olive oil
2/3 c. chopped onion 2 t. finely graded orange rind
1 t. sugar
1 habanero peper, finely chopped
2 T. chopped fresh basil
