1/2 lb bacon
1 lb ham, chopped
1 lb smoked sausage(cut into 1-2inch pieces)
2 cooking spoons oil
2 cooking spoons flour
4 medium onions chopped
3 cloves garlic minced
1 Tbs parsley flakes
1 can Rotel tomatoes
8-10 oysters and oyster water
salt to taste
8 cups cooked rice

Directions:
Fry bacon and set aside. Make dark roux with oil and flour. Add all meats, onions and garlic and brown for 15-20 minutes. Add bacon, tomatoes and
seasoning. Add 1/2 cup water and simmer 15-20 minutes. Then add oysters and oyster water and cook 20 minutes. Add the rice. More seasoning can be added if desired.
