Mexican Hamburger Casserole Recipe

1 1/2 lbs hamburger
1 - 15 oz mex-style diced tomatoes
1 1/2 c. frozen corn
1/2 c. shredded mex-cheese blend
1/2 c. flour
1/2 c. corn meal
2 tbsp sugar
1 1/4 tsp baking powder
1 egg (beaten)
2/3 c. milk
2 tbsp cooking oil

Cook hamburger and drain. Stir in tomatoes and corn. Place in greased 2 qt. baking dish. Sprinkle with 1/2 c. cheese.


Combine flour, corn meal, sugar, baking powder and salt. Stir in egg, milk and oil. Spread evenly over beef mixture. Sprinkle remaining cheese on top. Bake uncovered at 350 for 30 minutes.
