1 can (17oz.) apricot halves
2 tsp. cornstarch
1 T. water
1/4 c. cognac
1/2 c. lemon juice

Directions:
Directions:
Puree undrained apricots in electric blender until smooth. In small saucepan, blend cornstarch and water; stir in apricot puree, cognac, and lemon juice. Cook, stirring constantly until sauce boils 1 minute. Cool, then cover and chill. Serve over ice cream.
