1 gallon vegetable broth
1 c.kosher salt
1/2 c.brown sugar
1 tbsp. whole black pepper
1/2 tbsp. allspice berries
1/2 tbsp ginger candied

Combine ingredients in a large pot and boil. Cool and pour into clean bucket
Add one gallon of iced water.
Place (defrosted) turkey breast down in the mixture for 6-8 hours before removing it to roast.
