3 carrots, shaved
3 sticks celery, finely chopped
1 stick butter
3 cans chicken broth
3 cans cream of potato soup
1 1/2 pounds of Velveeta, cubed
8 oz sour cream

Directions:
Directions:
Saute' carrots and celery in butter for about 5 minutes. Add chicken broth and stir for 10 minutes. Add potato soup and Velveeta, stir until melted. Then add sour cream. Make sure to keep stirring so the bottom doesn't burn.
