5 Medium Potatoes
6 Ribs Celery
Mayonnaise
paprika
1 Onion
6 Hard Boiled Eggs
Salt and Pepper

Directions:
Directions:
Boil potatoes with skin on - test for doneness with fork. When done, run under cold water and cool. Peel potatoes and slice in large bowl.

Chop onions and celery and three of the hard boiled eggs. Add to sliced potatoes. Salt and pepper, then toss in about a cup of mayonnaise. If not enough, add more for right consistency. Slice remaining three eggs and place on top of salad. Sprinkle with paprika. Cool several hours before serving.

There was a time - that when I went to my Mom's - there was always a fresh batch of potatoe salad - and I would usually keep the whole bowl - pretty much to myself - Mom always makes it the best - I make this often - sometimes two batches in one day - 'nough said.
