1 1/2 pounds skinless, boneless chicken breasts (3-4)
1 c. flour
1 tsp. kosher salt
1/2 tsp. ground black pepper
2 large eggs
1 c. seasoned bread crumbs
1/2 c. grated Parmesan cheese
Unsalted butter
Olive Oil


Directions:
Directions:
Slice chicken breasts diagonally into four or five large strips.
Combine the flour, salt and pepper on a plate. Beat the eggs with 1 tbsp. of water on a second plate. Combine bread crumbs and Parmesan cheese on a third plate. Cover both sides of chicken in flour mixture, then dip both sides in egg mixture and roll in bread crumb mixture until coated.
Heat 1 tbsp of butter and 1 tbsp of olive oil in a large skillet. Cook the chicken strips on medium-low heat for 3 minutes on each side or until cooked through. Cook all strips and serve with dipping sauces.
