3 C. all purpose flour + extra for dusting
1/2 C. whole wheat flour
1/2 C. unprocessed wheat bran
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
1 2/3 c. buttermilk

Directions:
Directions:
Preheat oven to 350º. Line baking sheet with parchment paper. Stir together flours, bran, salt, baking soda & powder until well blended. Make a well in center. Pour in buttermilk all at once. Using a fork, stir until buttermilk is absorbed & starting to hold together. (Should look like rough biscuit dough) Add additional buttermilk if too dry. Using floured hands, form dough into round dome-shaped loaf 8" wide. Lift loaf from bowl & transfer to baking sheet. Dust top with flour. Using sharp knife, cut 3/4" deep cross into top of loaf. Bake 38-40 min. (rotating 1/2 way through) until deep golden brown & tester comes out clean. Remove from oven & transfer to wire rack to cool.
