Ingredients:  
1 can stewed tomatoes, chopped
1/2 bell pepper, finely chopped
1 stalk celery, finely chopped
1/2 onion, finely chopped (we recommend Bermuda onions)
2-3 Serrano chilis, roasted, peeled, seeded and chopped
1/2 to 1 tsp. lemon juice
salt to taste

Directions:
Drain canned tomatoes and mix with the rest of the ingredients. Allow to sit overnight. We add 3 to 4 chili seeds for mild salsa and more for hotter salsa. Salsa gets hotter overnight as it sits.
