2 qt apple juice
1 c kosher salt
2 T dried rosemary
2 T dried thyme
1 T dried sage
1 t coarsely ground black pepper
1 10- 12 lb turkey

Directions:
Directions:
Combine all ingredients in large pot. Stir vigorously until the salt is dissolved.
To brine the turkey, arrange it breast side down, in a sturdy plastic bag. Put bag in a cooler lined with ice.Pour the brine over the turkey. Add 3 qts cold water.Pull the sides of the bag up against the turkey, so brine almost completely covers the turkey. It is important that the breast is submerged.
Seal bag tightly, close lid of cooler, set aside for 18- 24 hours.
