Ingredients: 1 package active dry yeast 1/4 cup water (luke warm) 2 1/2 cups water (hot) 1/2 cup brown sugar 3 tsp. salt 1/4 crisco vegetable shortening 3 cups whole wheat flour 5 cups all purpose white (unbleached) flour

Directions:Oven: 375º 40-45 minutes
Soften yeast in 1/4 cup lukewarm water (110º). Set aside. Combine hot water, sugar, salt, shortening; cool to lukewarm.
Stir in whole wheat flour and 1 cup white flour; beat well. Stir in softened yeast. Add enough of remaining flour to make a moderately stiff dough. Turn out on lightly floured surface; knead till smooth and satiny (about 10 minutes).
Shape dough in a ball; place in lightly greased bowl, turning once to grease surface. Cover; let rise in warm place about 1 1/2 hours. Punch down. Cut in two portions; shape each into a smooth ball. Cover and let rest 10 minutes.
Shape in loaves (I usually do round). Place in greased loaf pans or rounds. Let rise till double (about 1 1/4 hours).
Bake in moderate oven (375º) about 40-45 minutes. Cover with foil last 20 minutes if necessary. Makes 2 loaves.

Notes: Stay away from bread machines! This recipe is best hands on. The less you kneed the dough the better. However, it should be smooth and non-sticky. Serve warm with real butter and jam.
