1 cup shortening
1 cup brown sugar
1 cup sugar
2 eggs
1 t. vanilla
2 cup. flour
1 t. soda
1/2 t. salt
1/2 t. baking powder
2 cup oatmeal
1 (6 oz) pkg milk choc. or semi sweet chips

Directions:
Directions:
1. In a large bowl, cream together first three
ingredients.
2. Add eggs & vanilla, combine.
3. Sift together dry ingredients, add to large bowl
mixture.
4. Stir in oatmeal & chips. Batter will be hard to
stir.
5. Use spoon to spoon out dough onto greased,
shiny cookie sheet.
5. Bake at 350 for 10-12 minutes.

Anytime I brought a boyfriend home (of course in my younger days) my Mom would send them home with a batch of Cowboy Cookies. Everyone loved her - I just had to find one to love me. To this day my husband's favorite cookies are these.
